Ingredients:

  • 1/4 cup nonfat yogurt
  • 1 tsp olive oil
  • 1/2 tsp lemon juice
  • 3/4 tsp salt
  • 1/4 tsp sugar
  • 1/8 tsp pepper

Directions:

  1. Stir together first 7 ingredients until well blended.
  2. Peel, seed, and slice cucumbers. Add to yogurt mixture, tossing to coat. Cover and chill, stirring occasionally, at least 2 hours.
