Creamy Baked Mashed Potatoes

Ingredients:

Directions:

  1. Preheat oven to 350°F.
  2. In a large saucepan, cover potatoes with cold, lightly salted water.
  3. Set heat to medium and bring potatoes to a boil.
  4. Cook uncovered, stirring occasionally until fork tender{approximately 20 minutes}.
  5. Drain and mash potatoes using potato masher.
  6. In a large bowl, beat the milk into the mashed potatoes.
  7. Stir in 3/4 cup of the cheese, Vegetable Soup Mix, green onions, and the beaten egg.
  8. Transfer mixture to a lightly buttered 1 1/2 quart baking dish.
  9. Bake at 350F for 50 to 55 minutes or until potatoes are firm and top is lightly browned.
  10. Sprinkle remaining 1/4 cup of cheese over casserole and bake for additional 5 minutes or until cheese is melted.
  11. Let stand for 5 minutes to set before serving.
