Cream of Broccoli Soup

Ingredients:

  • 2 quarts chicken broth
  • 1 1/2 lbs broccoli
  • 1 pint heavy cream
  • 3 tbsp cornstarch

Directions:

  1. Cook broth & broccoli over med heat until broccoli is very tender. Mash broccoli until it's mostly broken up. Add cornstarch to 1 cup water and mix, add to broth cook until thickened. Add salt & pepper to taste. Add cream and continue to cook until heated.
