Ingredients:

Directions:

  1. Into a small bowl, measure cranberries and port. Let stand for 1 hour, stirring occasionally. Drain. Discard port.
  2. In a large bowl, place cranberries, cheese, lettuce and croutons. Toss.
  3. CRANBERRY DRESSING: In a jar with a tight-fitting lid, combine oil, juice, pesto and vinegar. Shake well. Makes 1/3 cup dressing.
  4. Drizzle dressing over lettuce mixture. Toss.
