Crab And Spinach Quiche

Ingredients:

Directions:

  1. Preheat oven to 425F
  2. To make pastry:
  3. Combine flour and salt in a mixing bowl
  4. Cut in shortening with 2 knives or a pastry cutter until mixture is the consistency of cornmeal
  5. Add vinegar and then add water, 1 Tbsp at a time until mixture is moist.
  6. Turn out onto floured board and roll out to the size of quiche pan plus 1 inch extra for fluting
  7. Drape pastry over quiche pan and gently press into place
  8. Flute the edges using your forefingers and thumbs, moving around the edge until completed
  9. Do not bake
  10. Filling:
  11. In a small bowl toss the Swiss sheese, Parmesan cheese, flour , salt and paprika until well blended
  12. In a large bowl mix together the eggs and milk with a whisk
  13. Add the crab and spinach and mix well
  14. Fold the cheese mixture into the egg, crab and spinach mixture and mix well
  15. Pour the completed mixture into the unbaked pastry shell
  16. Bake at 425F for 15 minutes (do not open oven door during this time), then reduce heat to 350F and bake for 45 minutes or until top of quiche is firm and starting to brown
  17. Serve with a nice green salad
