Ingredients:

Directions:

  1. Preheat oven to 375*.
  2. Heat oil in a large nonstick skillet over medium-high heat.
  3. Add onion and next 6 ingredients (onion through jalapeno); saute 3 minutes.
  4. Stir in 1/4 cup barbecue sauce, potato, and the next 7 ingredients (potato through beans).
  5. Spoon the potato mixture into a 9x5 loaf pan coated with cooking spray.
  6. Bake at 375º for 30 minutes.
  7. Brush 1/4 cup barbecue sauce over loaf, and sprinkle with cheese.
  8. Bake an additional 10 minutes or until done.
