Couscous With Bacon & Vegetables

Ingredients:

  • 3 1/2 cups boiling water
  • 7 oz couscous
  • 1 tbsp olive oil
  • 6 slices bacon , grilled until crisp and chopped
  • 5 oz sweetcorn
  • 6 oz egg tomatoes, skinned , deseeded & chopped

Directions:

  1. Pour the water over the couscous & leave to stand for 5 minutes to rehydrate.
  2. Loosen the couscous grains with a fork & stir in the oil, bacon, sweetcorn, peas & tomatoes.
  3. Mix well & serve hot or cold.
