Country Dijon Sausage Pie

Ingredients:

Directions:

  1. In large skillet, cook sausage, onion and garlic until sausage is crumbly.
  2. Drain, reserving 1 tablespoon drippings.
  3. Place mixture in large mixing bowl.
  4. To drippings in skillet, add spinach.
  5. Cook, covered, 2 minutes or until wilted.
  6. Cool slightly.
  7. Chop.
  8. Add to sausage mixture.
  9. Mix in oregano, eggs and mustard.
  10. Pour in pastry-lined pie shell.
  11. Sprinkle with cheese.
  12. Top with pastry.
  13. Cut vents.
  14. Bake in preheated 400 oven 35 minutes or until browned.
