Cornmeal Muffins (Pre-1940's)

Ingredients:

  • 1/2 cup cornmeal
  • 1 cup flour
  • 1 tbsp sugar
  • 1 tbsp fat (crisco)
  • 1/2 tsp salt
  • 3/4 cup milk
  • 1 egg

Directions:

  1. Mix and sift dry ingredients.
  2. Add gradually milk and eggs beaten.
  3. Add fat.
  4. Bake in greased muffin pans in hot oven 400 degrees for aprox 25 minutes.
