Corn Syrup Condensed Milk Chocolate Chip Cookies

Ingredients:

Directions:

  1. In 2 quart saucepan over medium low heat combine butter, sugar and corn syrup.
  2. Heat to full boil stirring constantly with a wooden spoon.
  3. Boil 3 minutes stirring constantly.
  4. Slowly pour in sweetened condensed milk stirring constantly.
  5. Continue cooking over low heat until candy thermometer reaches 220-228 degrees.
  6. Remove from heat then stir in vanilla and beat until creamy.
  7. Immediately stir in toasted coconut and mix well.
  8. Spoon mixture by teaspoonfuls into circular mounds onto buttered waxed paper.
  9. Flatten slightly and with end of wooden spoon poke round hole in center of each cookie.
  10. Cool completely.
  11. Melt chocolate and drizzle thinly over cookies and let harden at room temperature.
  12. Store in airtight container.
