Ingredients:

  • 4 medium potatoes, peeled and diced into bite size pieces
  • 1 onion coarsley chopped ( i generally use 2 i like onions)
  • 1/2 lb of bacon ( pre cut before cooking into1/4 to 1/2 pieces) can also use salt pork.
  • 2 cans of sweet corn
  • 1 can of cream corn
  • 2 1/2 cups of milk
  • 3 tbsp of butter
  • salt and pepper to taste. generally use about 1 tbsp of and 1 1/2 tbsp of pepper. sorry is a guess i use my palm.

Directions:

  1. Place potatoes in a pot with just enough water to cover them and cook until still crisp but almost done. Drain and set aside.
  2. While boiling potatoes place 1/2 lb of bacon (or salt pork) in a skillet and cook until well browned.
  3. When bacon is almost done (5 mins before or so) add coarsely cut onion and sautee while bacon is finishing up. Drain off bacon grease into container ( I save it in a canning jar and use to season my cast iron)
  4. Place potatoes, onion and bacon in medium to large pot. Add milks and corns.
  5. Cook on med to med high heat until warm enough to eat.
  6. Before serving add butter, salt and pepper.
