Ingredients:

  • 1 3/4 cups all-purpose flour
  • 2 tbsp sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 6 tbsp butter or 6 tbsp margarine
  • 2 large eggs
  • 1/4 cup milk

Directions:

  1. Preheat oven to 425 degrees F.
  2. Spray baking sheet with nonstick cooking spray.
  3. Combine flour, sugar, baking powder, and salt in a mixing bowl.
  4. Using a pastry blender or fork, cut in butter until mixture resembles coarse crumbs.
  5. In a separate bowl, beat together eggs, milk, and 1 tbsp.
  6. Instant coffee.
  7. Add to dry ingredients, mixing until just blended.
  8. Stir in hazelnuts.
  9. On a lightly floured surface, knead the dough 5-6 times, but not too much or it makes the dough tough.
  10. Cut the dough into three parts; cut each part into fourths.
  11. Pat each part into a patty or roll and place on baking sheet.
  12. Bake at 425 degrees F.
  13. For 10-12 minutes or until light golden.
  14. Remove from baking sheet and cool on wire rack.
  15. Prepare glaze by mixing 1 tbsp.
  16. Water with 1/4 tsp.
  17. Instant coffee; add 1/2 cup powdered sugar, stirring until well blended.
  18. Drizzle over scones with a spoon, adjusting consistency, if necessary with a little water or more sugar.
  19. Serve.
