Coconut Tapioca Ooze

Ingredients:

  • 1 (13 1/2-oz) can coconut milk
  • 4 cups water
  • 1/4 tsp salt
  • 3/4 cup sugar
  • 7 oz small tapioca pearls
  • 1/4 cup lemon juice
  • green food coloring, as needed

Directions:

  1. Bring the coconut milk, water, salt, and sugar to a boil in a heavy saucepan. While boiling, whisk in the tapioca and continue to simmer until tender, 12 to 14 minutes, stirring occasionally. Cool immediately by placing in a flat bowl and covering the surface with plastic. Let rest about 2 hours. When cool, add the lemon juice. Stir to incorporate. To make green, add drops of food coloring to desired color.
  2. To serve, scoop into individual bowls.
