Ingredients:

  • 2 cups sugar
  • 2 cups flour
  • 1 tsp salt
  • 1 tsp cinnamon
  • 2/3 cup coconut
  • 2 (3 oz) boxes of coconut pie filling pudding
  • 5 eggs
  • 1 1/2 cups oil
  • 2 cups pumpkin

Directions:

  1. 1. heat oven to 350 degrees.
  2. 2. Grease two loaf pans.
  3. 3. Mix together the first 8 ingredients.
  4. 4. Mix together eggs, oil, and pumpkin, blend well.
  5. 5. Mix with dry ingredients and mix well.
  6. 6. Pour into pand and bake for 1 hour.
