Coconut Mounds Cake

Ingredients:

  • 1 cup sugar
  • 2 tbsp margarine
  • 1/2 cup milk
  • 20 large marshmallows
  • 14 oz package flaked coconut
  • 3 tbsp cocoa
  • 4 cups confectioners' sugar

Directions:

  1. Mix and bake cake mix as directed for two layers.
  2. Let layers cool then split each layer in half lengthwise.
  3. In a saucepan over medium heat mix together sugar, margarine and 1/2 cup evaporated milk.
  4. Cook 10 minutes then stir in marshmallows and mix until smooth.
  5. Stir in coconut then spread filling between cake layers.
  6. Mix together cocoa, remaining evaporated milk, confectioner's sugar and vanilla.
  7. Beat until smooth and spread over top and sides of cake.
