Ingredients:

  • 1/2 cup margarine
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • 1 tsp. vanilla
  • 1 1/2 cups flour
  • 1/2 tsp. salt
  • 1 cup coconut

Directions:

  1. Cream margarine and sugar. Beat in eggs one at a time and mix in milk and vanilla.
  2. Stir flour, baking powder, salt and coconut together. Add to egg mixture and stir until blended.
  3. Pour into a greased loaf pan.
  4. Bake at 350 degrees for 60-70 minutes until toothpick comes out clean.
  5. Cool in pan for 10 minutes and remove to rack.
