Coconut Carrot Salad

Ingredients:

  • 1 small package of carrots gerated
  • 1/4 cup package sweet flaked coconut
  • equal amounts of sour cream and pure mayonnaise
  • 2 tbsp honey or to taste
  • dash of salt

Directions:

  1. Mix carrots, coconut and raisins
  2. Add enough sour cream and mayo to make a mosit but not soggy dressing
  3. Stir in honey to taste and a dash of salt
  4. Chill well before serving
