Cinnamon Pecan Muffins

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 1/2 tsp salt
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup plus 1 tbsp oil

Directions:

  1. Mix first 5 ingredients together, then add egg, milk and oil.
  2. Mix until almost blended, adding pecans. Do not over mix batter.
  3. Fill greased muffin pans two-thirds full.
  4. Bake muffins at 400 for 20 to 25 minutes.
