Ingredients:

  • 1/3 cup shortening
  • 1/2 cup sugar
  • 1 egg
  • 1 tbsp vanilla
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/2 cup milk
  • 1/2 cup sugar
  • 2 tbsp cinnamon

Directions:

  1. Preheat oven to 350°F.
  2. In a small bowl, beat together shortening, sugar, egg, and vanilla.
  3. In a separate bowl, combine flour, baking powder, salt, nutmeg, and cinnamon.
  4. Add flour mixture alternately with the milk to the shortening mixture.
  5. Fill greased muffin cups 1/2 to 2/3 full with batter, and bake at 350°F for 20 minutes.
  6. Once muffins are cooked, allow to cool for 5 minutes.
  7. For topping, roll the tops of the muffins in the melted butter, and then in the cinnamon-sugar mixture. Serve warm with milk or coffee!
