Cinnamon Chip Applesauce Coffee Cake

Ingredients:

  • 1 cup sugar
  • 2 eggs
  • 1/2 tsp vanilla
  • 3/4 cup applesauce
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 -2 tbsp water
  • 1/8 tsp vanilla

Directions:

  1. Heat oven to 350.
  2. Lightly grease a 13x9x2-inch baking pan.
  3. Beat butter and sugar in a large bowl on medium speed until well blended.
  4. Beat in eggs and vanilla.
  5. Mix in applesauce.
  6. Combine flour, baking soda and salt-gradually add to butter mixture, beating until well blended.
  7. Stir in cinnamon chips and pecans.
  8. Spread into prepared pan.
  9. Bake for 30 to 35 minutes or until wooden pick inserted in center comes out clean.
  10. Cool completely in pan on wire rack.
  11. Drizzle with glaze or sprinkle with powdered sugar.
