Cinnamon Applesauce Bread

Ingredients:

  • 1 1/2 cups flour
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 egg
  • 3/4 cup firmly packed brown sugar
  • 2/3 cup skim milk
  • 2 tbsp oil
  • 1 1/2 cups bran flakes

Directions:

  1. Heat oven to 350 degrees F.
  2. Mix flour, baking powder, cinnamon and salt in large bowl.
  3. Beat egg in small bowl; stir in applesauce, sugar, milk and oil.
  4. Add to flour mixture; stir just until moistened.
  5. (Batter will be lumpy).
  6. Stir in cereal.
  7. Pour into a 9 x 5-inch loaf pan, which has been sprayed with no stick cooking spray.
  8. Bake 55 minutes or until toothpick inserted in center comes out clean.
  9. Cool 10 minutes; remove from pan.
  10. Cool completely on wire rack.
