Ingredients:

Directions:

  1. Saute the mushrooms, onion, celery, crab delights (or shrimp) and garlic in the olive oil.
  2. In a separate pan bring the chicken broth to a boil, add the pasta (any shape, I used farfale) and cook for 12 minutes. (Don't drain, most of the water will be absorbed).
  3. Add the sauted mixture to the pasta. Add in the uncooked spinach and mix it well until the spinach wilts (about a minutes). Season with pepper to taste.
  4. Variations - could add some lemon grass to give it some brightness. Lemon or lime juice might be nice. Or could add ginger and/or curry. Or cilantro. Whatever you like and have on hand.
