Cilantro Chicken Salad

Ingredients:

  • 2/3 cup olive oil
  • 1/4 cup lime juice
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 4 cups torn lettuce leaves
  • 1 pint cherry tomatoes

Directions:

  1. Combine oil, lime juice, cilantro, cumin, salt and red pepper flakes in a jar with a tight fitting lid.
  2. Shake well.
  3. In a large bowl, combine the lettuce, chicken and tomatoes.
  4. Drizzle with cilantro dressing.
  5. Toss to coat.
