Ingredients:

  • nonstick cooking spray
  • 1 cup salsa
  • 2 cups grated cheese , a combination of monterey jack and cheddar is nice

Directions:

  1. Spray 2 cookie sheets with a nonstick cooking spray. Place 2 tortillas on each sheet. Divide salsa, cheese and olives among 4 tortillas. Take the remaining 4 tortillas and place on top of the prepared tortillas. Gently press down. Bake in a preheated 350 degree oven for 15 minutes or until heated through and cheese is melted. Remove from the oven and cut each quesadilla into 6 pieces.
