Ingredients:

Directions:

  1. Preheat oven to 200degC. Line 2 baking trays with baking paper.
  2. Finely dice chorizo and fry in oil til golden. Drain on paper.
  3. Place butter, water and salt in a saucepan over medium high heat.
  4. As soon as the butter has melted and the water is boiling, add the flour all at once and beat with a wooden spoon until smooth.
  5. Reduce heat to low and beat until the dough pulls away from the sides of the pan and forms a ball.
  6. Stir over heat for 2 mins to dry the dough slightly.
  7. Remove from heat and cook 5 mins.
  8. Add one egg to dough and beat really well until incorporated and smooth.
  9. Repeat with remaining egg. Stir in chorizo and mozzarella.
  10. Using 2 spoons, srop dollops of the mixture onto trays. Flick a little water over them to help produce steam.
  11. Bake for 20 mins until puffed and golden, and serve immediately!!
