Cholesterol Busting Muffins

Ingredients:

  • 16 oz oat bran
  • 1/2 cup oats
  • 1 cup raisins
  • 1 cup skim milk

Directions:

  1. Preheat oven to 450 degrees
  2. In a large mixing bowl, mix Oat bran, oatmeal and the baking powder together.
  3. Add the chopped apples, walnuts and raisins and mix again.
  4. In a blender, blend the skim milk, bananas, and egg beaters until bananas are liquefied.
  5. Pour contents of blender into the mix and mix thoroughly with a large spoon.
  6. Grease two muffin pans lightly with olive oil and scoop muffin mix into muffin wells
  7. Just up to brim do not overfill.
  8. This recipe makes about 18 muffins
  9. Place muffins in oven for exactly 17 minutes.
  10. Refrigerate or freeze muffins.
  11. Warm muffins in microwave for 1 to 1 1/2 min on high.
  12. Split the muffins and spread 1-2 teaspoon of Benecol spread on each muffin.
