Chocolate Wafers (Diabetic)

Ingredients:

  • 1 egg
  • 2 tbsp cocoa
  • 1 tsp vanilla
  • 1 cup flour
  • 1/4 tsp baking soda
  • 2 tbsp water
  • 1 dash salt

Directions:

  1. Combine margarine,sugar ,egg,cocoa and vanilla in bowl.
  2. Whip until creamy.
  3. Combine dry ingredients and add along with water mixing well.
  4. Shape in balls.
  5. Wrap in waxed paper and chill 1 hour.
  6. Roll out dough to 1/8 inch on lightly floured board.
  7. Cut with 2 1/2 inch cookie cutter and place on ungreased cookie sheets.
  8. Bake at 350F 8-10 minutes.
