Chocolate Sauce

Ingredients:

  • 7 oz high quality bittersweet chocolate (do not use chocolate chips)

Directions:

  1. Coarsely chop the chocolate and place in a stainless steel bowl.
  2. Heat the cream until scalding, pour over the chocolate.
  3. Let sit 5 minutes before stirring.
  4. Stir with a whisk until very smooth.
  5. Serve sauce warm, or refrigerate for later use.
  6. This will keep for several weeks in the refrigerator.
  7. To reheat, just gently heat over a double boiler.
