Chocolate Nut Pasta

Ingredients:

  • 12 oz fettuccine or 12 oz tagliatelle pasta noodles
  • 1 tsp butter
  • 2 -3 tbsp breadcrumbs
  • 1/2 tsp salt
  • 6 tbsp butter
  • 3 1/2 cups confectioners' sugar
  • 4 tbsp breadcrumbs
  • 1/2 tsp cinnamon
  • 3 tsp lemon zest

Directions:

  1. Bring a pan of salted water to a boil. Add the pasta and cook for 6 minutes or according to package directions. Drain, rinse with cold water, and set aside.
  2. For the sauce, beat butter, half the sugar, and the egg yolks until frothy.
  3. In another bowl, whisk the egg whites with half the sugar until stiff, then fold into the butter mixture.
  4. In another bowl, mix the nuts, chocolate, bread crumbs, cinnamon, and lemon zest. Add to the egg mixture. Add to the pasta and mix gently.
  5. Preheat oven to 400 degrees F. Grease an ovenproof dish with the butter. Sprinkle with bread crumbs, spreading evenly to coat base and sides. Pour pasta mix into the dish and bake for 25-30 minutes.
