Chocolate Mini Cupcakes With Penuche Frosting

Ingredients:

  • 1 1/2 cups flour
  • 1/2 cup cocoa powder
  • 1 cup sugar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup milk
  • 1/2 cup vegetable oil
  • 1/2 cup butter
  • 1 cups brown sugar
  • 1/4 cup milk

Directions:

  1. Melt butter in saucepan over medium heat.
  2. Add brown sugar and stir constantly until reaching a boil
  3. Reduce heat to low and continue stirring about 2 minutes
  4. Add milk to mixture and return to boil, continuing to stir, then remove from heat
  5. Put frosting mixture into fridge for 30 minutes while making cupcakes
  6. Preheat oven to 350 degrees
  7. Mix together flour, cocoa powder, coffee powder, sugar, baking powder, baking soda and salt
  8. Mix together milk, vegetable oil, and vanilla extract
  9. Add wet ingredients to dry and stir until just mixed.
  10. Spoon into 48 lined mini muffin cups and bake 10 minutes
  11. Remove cupcakes from pan and allow to cool before frosting
  12. Remove frosting mixture from refrigerator and slowly beat in powdered sugar. Add 1 tsp milk if consistency becomes thicker than desired
