Chocolate-Glazed Cranberry Blondies

Ingredients:

  • 2/3 cup flour
  • 1/2 tsp baking powder
  • 1 egg
  • 1 cup brown sugar , packed
  • 3 1/2 tbsp butter, melted
  • 1/3 cup confectioners' sugar
  • 1 tbsp hot water
  • cooking spray

Directions:

  1. Heat oven to 350°F.
  2. Coat an 8 inch square pan with cooking spray, and line the bottom and two sides with foil, letting the ends of the foil extend over the sides of the pan.
  3. Spray the foil with cooking spray. Sift together flour and baking powder and set aside.
  4. Beat together egg, brown sugar, butter and vanilla.
  5. Gradually beat in flour mixture just until blended.
  6. Mix in cranberries and walnuts. Spread batter in pan.
  7. Bake for 20 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool in pan on a wire rack.
  9. Make the glaze by whisking together the confectioners' sugar, cocoa and water until smooth.
  10. Drizzle over blondies.
  11. When the glaze is set, remove from the pan using the foil handles and cut.
