Chocolate Chip Cookie Icecream Sandwiches

Ingredients:

Directions:

  1. Pre-heat oven to 350 degrees
  2. Grease several baking sheets
  3. Cream the butter & sugars together until light & fluffy
  4. Beat in the egg & vanilla
  5. Sift the flour, cocoa & slat together & fold into the sugar/butter mixture
  6. Fold in the chocolate chips
  7. Put about 4 heaping Tblspn of the mixture, spaced well apart on each baking sheet.
  8. Press them down & spread them out using the back of a wet spoon
  9. Bake for 12 - 15 mins
  10. Cool on baking sheets 2 mins & then move to wire racks to cool completely
  11. When cold use immediately or store in an airtight container until ready to use for up to 5 days
  12. To assemble the sandwiches, spread a layer of icecream about 1 inch thick on a cookie, then press a 2nd one on top
  13. Repeat to make 6 sandwiches
  14. Freeze until ready to serve
