Chilled Orange Soufflé With Calendula

Ingredients:

Directions:

  1. Beat egg yolks until light and fluffy.
  2. Add 1/2 cup sugar gradually; beat until very light in color.
  3. Blend in juices, peel, and a dash of salt.
  4. Stir over low heat until slightly thickened.
  5. Soak gelatin in liqueur and stir into hot custard. Cool.
  6. Beat egg whites until foamy, adding remaining 1/2 cup sugar gradually.
  7. Beat until stiff. Whip cream.
  8. Fold egg whites into custard with a whisk and then gently fold in whipped cream and calendula petals.
  9. Pour into a bowl or glass soufflé dish. Chill.
  10. To serve, top with paper-thin orange slices and calendula flowers.
