Ingredients:

Directions:

  1. Cook bacon in skillet until almost crisp; remove and chop; drain fat from skillet.
  2. Remove stems from mushrooms; finely chop 2/3 of stems.
  3. Cook mushroom caps in boiling water 1 minute; drain; rinse under cold water; drain on paper towel.
  4. Heat butter in skillet; add chopped mushrooms, onion, garlic; cook for 5 minutes.
  5. Add red pepper and jalapeno; cook 3 more minutes; cool.
  6. Stir in bacon, cheese and parsley.
  7. Spoon mixture into mushroom caps; Place on baking sheet,
  8. Bake in preheated 350 degree oven for 10 minutes.
