Chickpea and Tofu Curry

Ingredients:

  • 324 g tofu
  • 2 cups cauliflower
  • 3 tbsps mirin
  • 1 1/2 cup diced tomatoes
  • 1/3 cup chickpeas
  • 1 tbsp yogurt
  • 1 tbsp curry powder
  • 1 tbsp cumin
  • 1 tsp turmeric
  • 1 tbsp soy sauce
  • 1 tbsp lime juice

Directions:

  1. Chop cauliflower and cube tofu
  2. Add cauliflower tofu to mirin, soy sauce and lime juice
  3. Steam on medium for 3 minutes
  4. Add tomatoes and spices
  5. Simmer on low for 10-15 minutes
