Vegan red curry
Ingredients:
324 g tofu
2 cups cauliflower
3 tbsps mirin
1 1/2 cup diced tomatoes
1/3 cup chickpeas
1 tbsp coconut flakes
1 tbsp yogurt
1 tbsp curry powder
1 tbsp cumin
1 tsp turmeric
1 tbsp soy sauce
1 tbsp lime juice
Directions:
1. chop cauliflower and cube tofu
2. add cauliflower tofu to mirin, soy sauce and lime juice
3. steam on medium for 3 minutes
4. add tomatoes and spices
5. simmer on low for 10-15 minutes
