Ingredients:

  • 1/2 cup flour
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. paprika
  • 1/8 cup canola oil
  • 1/2 tsp. seasoned salt

Directions:

  1. Pour 1/4 cup oil into baking dish. Put dish in oven so oil will get hot as oven preheats to 425�°.
  2. Trim visible excess fat from chicken pieces.
  3. Combine flour, regular salt, pepper, and paprika in gallon zip-lock bag; shake to mix. When oven (and oil) have reached 425�°, remove baking dish from oven, shake chicken pieces quickly in flour mixture in bag (one or two pieces at a time) and place in hot oil. Sprinkle all with seasoned salt to taste.
  4. Bake 25 minutes on first side.
  5. Turn all chicken pieces; sprinkle second side with seasoned salt to taste. Bake 15 minutes longer.
  6. Remove chicken immediately from oil and place on paper towel-lined plate (blots extra oil).
  7. If chicken pieces are very small, they may take a little less time.
