  1. Melt butter in large kettle.
  2. Add onion.
  3. Cook and stir 5 minutes.
  4. Add stock and remaining ingredients.
  5. Bring to boiling point and simmer 40 minutes.
  6. Before serving cut chicken into bite-sized pieces and return to soup.
