Chicken Fried Steak With Gravy

Ingredients:

  • 1 cup flour
  • salt (to taste)
  • pepper (to taste)
  • paprika (to taste)
  • garlic powder (to taste)
  • dash of white pepper
  • 1/4 cup milk
  • oil for pan about 1/4 inch to 1/2 inch
  • 2 cups milk
  • 1/2 cup flour
  • dash of white pepper
  • salt and pepper to taste

Directions:

  1. Add oil to large pan and heat.
  2. Mix the milk and eggs together.
  3. Mix flour with salt, pepper, garlic powder, dash of white pepper-mix well.
  4. Salt and pepper each side of your meat, dip first into flour mixture then into egg and milk mixture, and once again into flour mixture-place in hot oil-cook until brown on both sides and juices are clear when pierced with fork .
  5. Repeat process for all your meat.
  6. Gravy:
  7. Drain off excess grease in pan except for about 3 tablespoons.
  8. Place your flour in grease, mix the flour and grease together to form a roux.* (roux is very important for a smooth gravy) keep stirring your roux for about 2 minutes-be careful not to burn.
  9. Carefully pour your milk into the roux and keep stirring constantly. Stir until gravy reaches desired thickness.
  10. Check seasoning at this point, add more salt and pepper and a couple dashes of white pepper.
