Chicken Fingers With Honey Mustard

Ingredients:

  • 1 cup all-purpose flour - please see note at bottom of directions
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3/4 cup milk
  • 1/2 cup honey
  • 1/4 cup dijon mustard
  • stir together in small bowl

Directions:

  1. Prepare honey mustard a day ahead to let the flavors blend
  2. Cut chicken into 1/2' x 2 strips
  3. Place flour, salt & pepper in a re-sealable plastic bag, shake to mix
  4. Place milk in a bowl
  5. Dip chicken strips in milk & place into thebag of flour in batches
  6. Shake to coat well
  7. Shake excess flour off each piece & place on wax paper in single layer until all are coated
  8. Divide chicken into batches
  9. Heat 1/4 inch of oil in a large heavy skillet over medium/high heat
  10. Place chicken strips in an even layer in hot oil
  11. Fry, turning once, for about 3 mins on each side or until golden brown
  12. Drain on paper towels
  13. Repeat until all chicken is fried, keeping the rest warm in a low heat oven
  14. NOTE:- If you would prefer fingers a little spicy, add 1/4 tsp cayenne pepper to the flour mixture
