Ingredients:

Directions:

  1. Preheat oven to 350
  2. Prepare rice
  3. Saute onions, carrots, pepper in hot oil for 10 min
  4. Combine rice, onion mix, chicken, beans, diced tomatoes and chilles adn 1 1/2 c. cheese in a large bowl
  5. Spoon into lightly greased 3qt or 13x9 inch baking dish, sprinkle with remaining cheese
  6. Bake covered 350 for 30 min.
