Ingredients:

  • 2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2/3 cup sugar
  • 1 tsp vanilla
  • 1/3 cup vegetable oil
  • 2/3 cup milk

Directions:

  1. Combine dry ingredients in a mixing bowl.
  2. In separate bowl, blend egg, vanilla, oil and milk.
  3. Stir in cherries.
  4. Pour liquid mixture over dry, stirring with several quick strokes to moisten and combine.
  5. Spoon batter into greased muffin cups.
  6. Bake at 375 degrees F for 20-25 minutes.
