Cheesy Beef and Tomato Bake

Ingredients:

Directions:

  1. Heat oven to 400.
  2. Spray 8-inch square baking dish with nonstick cooking spray.
  3. Cook ground beef in large skillet over medium high heat until thoroughly cooked, stirring frequently.
  4. Drain.
  5. Stir in soup mix, chopped tomatoes, rice and water.
  6. Bring to a boil.
  7. Pour into sprayed baking dish.
  8. Cover tightly with foil.
  9. Bake at 400 for 20 to 25 minutes or until liquid is absorbed and rice is tender.
  10. Uncover; top with tomato slices; sprinkle with cheese.
  11. Bake uncovered an additional 10 minutes or until cheese is melted.
