Ingredients:

  • 1 1/2 lb baking potatoes, unpeeled and cut into thin strips ( about 3 potatoes)
  • cooking spray
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp paprika

Directions:

  1. Preheat oven to 450°.
  2. Coat potato strips with cooking spray, and place in a large heavy-duty zip-top plastic bag. Combine cheese and remaining 3 ingredients; sprinkle over potato strips in bag. Seal bag and turn to coat potatoes well.
  3. Arrange potato strips in a single layer on a large baking sheet pan coated with cooking spray. Bake at 450° for 15 minutes, turning once. Serve immediately.
  4. Note: Most of us know it's not what's in a potato but what's on it that gets us into trouble. The innocent spud, which has 220 calories and only 0.2 grams of fat, often takes the rap for its toppings. Just 1 tablespoon of butter or margarine provides 102 calories and 11.5 grams of fat. One tablespoon of reduced-fat margarine provides half the amount of calories and fat, and low-fat sour cream has only 21 calories and 1.9 grams of fat for the same amount. To really keep the fat and calories low, try topping that potato with reduced-sodium salsa (it's fat free), fat-free yogurt, or fat-free sour cream.
