  1. Smash biscuits into crumbs
  2. Put them into a dish
  3. Peel & slice the oranges / Clementine, remove any pips
  4. Bring 55g castor sugar to boil with 6 tbsp of water on a medium heat until a golden caramel
  5. Remove from heat
  6. Add the juice from extra 2 oranges
  7. Stir in
  8. To loosen caramel slightly
  9. Pour over your sliced oranges so they marinate in caramelised juices.
  10. Divide the ginger biscuits between 4 plates , top with ice cream and some caramelised orange
