Ingredients:

Directions:

  1. Wash the rice, soak it in water for 30 minutes and keep aside.
  2. Powder the cloves and cardamoms and keep aside.
  3. Heat oil in a skillet.
  4. Add ginger and garlic.
  5. Saute till lightly browned and the raw smell of the ginger and garlic is browned.
  6. Add the green chillies and spring onions.
  7. Saute for another 2-3 minutes, stirring frequently, every 30 seconds.
  8. Add the mint and corriander leaves and continue to cook for 2 more minutes.
  9. Add the powdered spices and mix well to get a wonderful aromatic mixture.
  10. Add in the drained rice, salt and water.
  11. Stir well.
  12. Bring to a boil.
  13. Lower flame, partially cover and cook till all the water has evaporated and the rice is cooked.
  14. Garnish with chopped spring onions.
  15. It looks really beautiful.
  16. Serve hot with a delicious dollop of yogurt or a raita for a wonderfully satisfying meal.
