Cashew-topped - Broccoli

Ingredients:

  • 1 -tablepoon butter
  • 2- tablepoon fresh minced onion
  • 3/4 - cup. sour cream
  • 1 - tsp.easpoon sugar
  • 1/2 tsp.easpoon white vinegar
  • 1/2 tsp.easpoon poppy seed
  • 1/2 tsp . paprika
  • 1/4 tsp.easpoon salt
  • dash cayenne
  • 3/4 to 1 - lb fresh broccoli
  • 1/4 - cup chopped cashews or almonds

Directions:

  1. Melt the butter in the top of a double boiler and saute′ onion until golden. While onion cooks, combine sour cream, sugar, vinegar, poppy seed, paprika, salt and cayenne. Mix well.
  2. Remove the onion from heat and stir in the sour cream mixture. Keep the sauce warm over bottom of double boiler.
  3. Wash, trim and cut the broccoli into serving pieces. Cook in a steamer until just tender-crisp.
  4. When done, arrange broccoli on a warm serving platter and top with heated sauce. Sprinkle with the cashews or toasted almonds and serve immediately
