Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine first 9 ingredients in a large mixing bowl; mix well, and set aside.
  3. Beat eggs 1 minute at high speed of an electric mixer until frothy and thickened.
  4. Gently fold eggs into carrot mixture.
  5. Spoon mixture into a well greased 1 1/2 quart ring mold. ( I use a mold with a large hole)
  6. Bake at 350 degree for 45 minutes.
  7. Remove from oven; cool on wire rack 20 minutes.
  8. Invert carrot ring onto a round serving platter.
  9. Note:
  10. Garnish sides with a fist full of parsley leaves on each side.
  11. Serve Green Peas in center of ring...beautiful.
