Ingredients:

  • 1/2 cup butter or margarine
  • 3/4 cup brown sugar
  • 1 egg
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp salt
  • 1 cup carrots
  • 1 tsp vanilla
  • 1/3 cup raisins

Directions:

  1. )Melt butter.2)Combine with sugar in a mixing bowl.3)Blend together.4)Beat in the egg.5)Combine flour,baking powder,cinnamon,ginger,and salt.6)Blend into egg-butter mixture.7)Stir in grated carrots,vanilla,and raisins.8)Spoon batter into a buttered 8-inch square pan.9)Sprinkle with chopped nuts.10)Bake at 350`f for 25 to 30 minutes.11)Cool.12)Cut into 2-inch squares.
