Apple Butter Muffins

Ingredients:

  • 1 3/4 cups flour
  • 1/3 cup sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 1/8 tsp allspice
  • 1/8 tsp ginger
  • 3/4 cup milk
  • 1/4 cup vegetable oil
  • 3 tbsp sugar

Directions:

  1. Preheat oven to 400 degrees.
  2. Mix the first 8 ingredients in a medium sized bowl.
  3. Combine the milk, egg and oil.
  4. Stir into dry ingredients until just blended, do not overmix.
  5. Grease or paper line 12 standard sized muffin cups.
  6. Fill cups with a rounded tablespoon full of batter.
  7. Top the batter in the cups with a rounded teaspoon of apple butter.
  8. Cover carefully with the remaining batter.
  9. Mix together topping ingredients and sprinkle over muffins.
  10. Bake for 15- 18 minutes.
  11. Cool in pan for 10 minutes.
  12. Remove to wire rack to continue to cool before serving.
